Chicken Satay

The start of summer marks the time when grills get cleaned up, patio chairs are dusted off and invitations to backyard BBQ’s arrive weekly. A crisp, chilled white wine to ward off the heat and an easy, appetizing meal right off the grill often accompanies summer months. 

A bottle of Cambria Winery Viognier pairs well with dishes rich in spices and full of flavor. This simple, delicious Chicken Satay recipe allows for the spice notes of curry powder and ground ginger to shine through on the chicken, yet balances well with Viognier’s intense aromas and flavors of citrus blossom, lime, cloves and passion fruit. It’s a great dish to throw on the grill that’s simple to serve guests and sure to please a crowd.

Chicken Satay

(yields 20 skewers)

Ingredients for the Chicken Satay: 

  • 1 ½ pounds skinless, boneless chicken breasts (cut into strips)
  • 1 cup plain yogurt
  • 1 teaspoon ground ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon curry powder
  • Butter lettuce leaves
  • Cilantro leaves
  • Vegetable oil (for grilling)
  • 15-20 wooden skewers (soak in water for at least 30 minutes)

Ingredients for Peanut Sauce:

(yields 3 cups)

  • 1 cup smooth peanut butter
  • 2 tablespoons dark brown sugar
  • 2 tablespoons red chili paste
  • ¼ cup low-sodium soy sauce
  • 2 limes juiced
  • ½ cup hot water
  • ¼ cup chopped peanuts (for garnish)

Directions for Chicken Satay: 

In shallow mixing bowl, combine yogurt, ginger, minced garlic and curry powder. Stir to combine. Gently toss chicken strips in yogurt marinade until well coated. Cover and refrigerate chicken for a minimum of 2 hours. 

After skewers have been soaked in water for a minimum of 30 minutes, thread skewer down the length of the chicken breast to ensure it stays in place when grilling. Turn grill to medium heat and brush with vegetable oil to prevent meat from sticking. Place the chicken skewers on grill for 3 to 5 minutes on each side, until nicely seared and cooked through. Serve chicken with peanut sauce and butter leaves with cilantro as garnish. 

Directions for Peanut Sauce: 

In small mixing bowl, combine the peanut butter, soy sauce, red chili paste, dark brown sugar and lime juice. Use hand mixer or food processor to puree mixture. Slowly add hot water to thin out the sauce to desired thickness. Pour the sauce into serving bowl and garnish with chopped peanuts.
