Peppermint Molten Lava Cakes

Molten lava cakes taste & feel special. Restaurants typically request advance notification if you are ordering the molten lava cake for dessert. This gives you the illusion that the pastry chef is working diligently on the chocolate confection.In reality, it’s just that with molten lava cakes, timing is everything. They couldn’t be easier to make. The secret is to not over bake, resulting in that outpouring of chocolate we’ve all come to love.

For the holidays, I’ve made my favorite molten lava cakes with a hint of peppermint. This decadent dessert takes just 10 minutes to make, but let’s keep that to ourselves, shall we? If you want to make it ahead, just refrigerate the prepared tins filled with batter & bring it to room temperature during dinner.

Peppermint Molten Lava Cakes

Ingredients:

  • ¾ c butter
  • 1 c chocolate chips
  • ½ c cream
  • 6 eggs
  • 2/3 c sugar
  • 1 tsp peppermint
  • ½ tsp salt
  • ½ c flour 

Recipe:

  1. Preheat oven to 400 degrees.
  2. Spray cupcake tins with cooking oil.
  3. Combine butter, chocolate chips & cream in microwave safe bowl & warm in 30 second increments, whisking vigorously until smooth.  Allow to slightly cool.
  4. In a large bowl, combine eggs, sugar, peppermint extract, salt, & flour.
  5. Gradually add chocolate mixture to egg mixture. Pour into cupcake pan & bake 8-10 minutes {for standard size cupcake tins}.
  6. Wait one minute, then invert onto a cookie sheet & transfer to plates with a spatula. Serve immediately.
