Homemade Flavored Whipped Butters

Have you ever attempted to make your own whipped butter? It may seem intimidating, but it could not be easier. Once you taste your homemade whipped butter, you will never want to buy store bought again. Here we will show you how to make homemade whipped butter, but we didn’t want to stop there. Once I had made the butters, I wanted to make some different flavors. Flavored whipped butters can take your meal to the next level and your family will think an executive chef has entered your kitchen. Homemade butter can be kept in the fridge and it will keep for a few weeks. You can also freeze butter and it will last up to six months. Just make sure it is wrapped tightly.

Homemade Flavored Whipped Butters

1 quart of heavy cream yields 1 pound (2 cups) butter. You can adjust the amount of cream depending on how much butter you want to make. I used 1 ½ of cream to make three butters yielding 1 cup each. You can use any type of mixer you want. I chose to use my food processor and decided to make it into two batches. I wanted to make sure it was the right consistency.

If you are making plain or a savory butter, you can add salt before you start mixing. 1 to 1 ½ tsp per quart of heavy cream.

 

How to make whipped butter.

You will want to mix until the cream turns into a cottage cheese consistency and starts to separate from the buttermilk. It will take about 3-5 minutes of constant mixing. Just be sure to keep your eye on it. Strain your butter from the buttermilk. You can save the buttermilk to use in other recipes.

After you strain the buttermilk from the butter, the next step is to wash your butter. It’s important to wash all the buttermilk out of your butter so it does not go rancid. Knead the butter in water (just like dough) to remove all the buttermilk. Repeat until the water is clear.

Homemade Flavored Whipped Butters

Now it’s time to make flavored butters. I decided to make three flavors. Pinot Noir Rosemary butter, Vanilla Bean Citrus butter and Blackberry Maple butter. All you have to do is take the ingredients you want to use to make your desired flavors and mix them into your fresh butter.

Pinot Noir Rosemary Butter

  • 1 cup salted homemade whipped butter 
  • Pinot Noir syrup 
  • 1 tbsp rosemary

Turn your stove on to medium heat. Fill a shallow saucepan with ¾ cup wine. Simmer until the consistency becomes a syrup. It ill reduce to about 1/8 cup of syrup. Be careful not to simmer it down too much because it will become a sticky paste. Let the syrup completely cool before mixing. Add to whipped butter and rosemary. Mix until completely ingredients are combined.

Blackberry Maple Butter

  • 1 cup homemade (unsalted) whipped butter 
  • ¼ cup blackberries 
  • 1 ½ tbsp maple syrup

Vanilla Bean Citrus Butter

  • 1 Cup homemade (salted or unsalted) whipped butter 
  • 2 vanilla beans 
  • 1 tbsp fresh lemon juice 

Slice your vanilla beans lengthwise and open. Scrape out all the seeds for both beans and add to the butter. Freshly squeeze your lemon into a small bowl and remove any seeds. Measure out 1 tbsp and add to the butter. Mix ingredients until combined.

Once we had our freshly made butter, we had to buy a steak to slather it on. We used the Pinot Noir Rosemary butter, and it was heavenly. Pair your steak and whipped butter with a glass of Cambria's Benchbreak Pinot Noir and your taste buds will thank you.
