As summer begins to wind down, we hope to make the most of every opportunity to kick back and relax, mingle with friends and simply enjoy a slower pace of life. I love to make simple, delectable appetizers that my guests are sure to love and keeps them wanting more. Easy to prepare dips, spreads and snacks are a great option to set out and let your friends and family nibble on while you uncork on the wine.
Since we had the opportunity to visit La Nogalera recently, we wanted to make one of their many delicious recipes that they have available on their website using their flavorful walnut oil. We really wanted to capitalize on making a dish that would truly allow the walnut oil to stand out amongst the rest of the ingredients. The Goat Cheese Marinated in Walnut Oil seemed like the perfect appetizer on a semi-warm evening and would pair well with Cambria’s 2012 Bench Break Chardonnay due its ability to cut through the richness and overall dry nature of the cheese.
Goat Cheese Marinated in Walnut Oil
Recipe by: La Nogalera
- ½ lb. goat cheese, sliced
- 2 cloves garlic, finely minced
- ½ cup walnut oil
- 1 tbsp fresh lemon or lime peel
- 3 tbsp fresh herb medley, such as rosemary, seal salt and fresh ground pepper (substitute tarragon, parsley, chives, etc)
- 1 French baguette, sliced or brioche toast
- 1 tomato, chopped
Place cheese slices in a single layer in a shallow glass dish. Blend together remaining ingredients and pour over cheese. Allow the mixture to marinated at least 4 hours and up to one day. Serve with toasted French bread slices and top with freshly chopped tomatoes.
When making this recipe, we highly suggest following the directions in letting it marinate for at least 4 hours if not more. We marinated the goat cheese for approximately 16 hours in the refrigerator and the results were well worth the wait. The creamy texture of the goat cheese having been marinated with the walnut oil, garlic, sea salt and rosemary was incredibly delicious and made for a perfect spread on the brioche toast.
