Summer has officially kicked off and one of our favorite appetizers to share with our friends and family is a bruschetta bar trio. Plenty of juicy tomatoes, fresh basil, strawberries and a savory balsamic glaze make for an abundance of delicious flavor combinations that even fulfill your guests sweet tooth cravings!

When it comes to preparing dishes for summer gatherings, the easier the better. As the host, we don’t want to be slaving in the kitchen while our guests are enjoying the warm weather, refreshing glasses of Cambria wine and good conversation. 

Classic Bruschetta Recipe

It really can’t get any easier than making a trio of bruschetta recipes that use a lot of the same ingredients and all get drizzled with a yummy balsamic reduction and freshly picked basil for garnish.

Classic Bruschetta

A classic recipe with a twist. This entertaining essential is loaded with fresh ingredients, including avocado and a delectable balsamic glaze that will certainly be a crowd favorite all summer long. 

Ingredients

  • 3 medium tomatoes
  • 1 avocado
  • 2 tbsp olive oil
  • 1 tsp fresh ground black pepper
  • 1 tsp fine sea salt
  • 1 focaccia loaf
  • Basil, for garnish 

Balsamic Glaze Ingredients

  • ½ cup balsamic vinegar
  • 2 tbsp brown sugar
  • ½ tsp fresh ground black pepper
  • ½ tsp fine sea salt 

Directions

  1. Dice tomatoes and avocado into small cubes and place in a small bowl with the olive oil, black pepper and sea salt. Toss and set aside.
  2. Slice focaccia loaf into semi-thick slices and place on a pan in the oven to toast for approximately 3 minutes.
  3. In a saucepan, over medium-high heat, add the balsamic, sugar, black pepper and sea salt. Stir consistently for approximately 5 minutes as the glaze begins to thicken. It should stick to the back of the spoon, but remove from the heat before it turns into a glob.
  4. Place the tomato mixture onto the slices of focaccia and drizzle with the balsamic glaze. Garnish with strips of basil.

Caprese Bruschetta

A refreshing spin on a classic appetizer with grilled bread, your favorite combination of tomato, mozzarella and basil and a savory drizzle of balsamic glaze.   

Ingredients

  • 2 cups cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp fresh ground black pepper
  • 8 ounces fresh mozzarella
  • 1 focaccia loaf
  • Basil, for garnish

Balsamic Glaze Ingredients

  • ½ cup balsamic vinegar
  • 2 tbsp brown sugar
  • ½ tsp fresh ground black pepper
  • ½ tsp fine sea salt

Directions

  1. Slice the cherry tomatoes into halves or thirds.
  2. Chop the mozzarella into small cubes and mix together with the tomatoes, olive oil and black pepper.
  3. Slice the focaccia bread into semi-thick slices and place on a pan in the oven to toast for approximately 3 minutes.

Strawberry Bruschetta Recipe

Strawberry Bruschetta

Sweet and salty is perfected in this strawberry bruschetta recipe with the combination of salty bacon and sweet, juicy strawberries. Throwing in the creamy goat cheese crumbles and candied balsamic glaze make it a delicious alternative to typical desserts.

Ingredients

  • 2 cups strawberries, chopped
  • 2 tbsp olive oil
  • ¼ cup goat cheese, crumbled
  • 4 slices bacon
  • 1 french bread loaf, sliced
  • Basil, for garnish

Balsamic Glaze Ingredients

  • ½ cup balsamic vinegar
  • 2 tbsp brown sugar

Directions

  1. Chop strawberries and place into small bowl.
  2. In a frying pan, cook the bacon and chop into small pieces. Combine strawberries, goat cheese and bacon together.
  3. Slice the french bread into semi-thick slices, brush with olive oil and place on a pan in the oven to toast for approximately 3 minutes.
  4. In a saucepan, over medium-high heat, add the balsamic and brown sugar. Stir consistently for approximately 5 minutes as the glaze begins to thicken. It should stick to the back of the spoon, but remove from the heat before it turns into a glob.
  5. Place the strawberry mixture on top of the slices of the bread, drizzle with balsamic glaze and garnish with strips of basil.

Strawberry Bruschetta

As the warm weather heats up we love to sip refreshing, chilled wines like Cambria’s Benchbreak Chardonnay. It has bright fruit notes of citrus, pineapple, white peach and apple that are complimented with a crisp finish.
